Creamy chicken and tarragon stew
Chicken thighs from the farmers' market expedition cooked with onions and carrots, stock, cream and a load of tarragon, served with roasted balsamic beetroot on a nest of caramalised carrots and spinach. Gin and tonic with raspberry on the side!
