Thai carrot, parsnip and noodle soup
Cooking the carrot, parsnip and onion until soft, we then added fresh red chilli, cumin, coriander and crystallised ginger and syrup, then added stock, coconut milk and noodles and left to simmer. Garnished with fresh coriander.
